While I love so many things about Fall, I can't say that I'm found of less sunlight! By the time I leave work to go get the kids (and start my 'real job'), I feel like I'm all out of steam. Do you ever feel like that? Ugh, that's the worst. So I came up with this very simple trail mix to give me a little energy boost to power through the pre-dinner rush.
Blues Buster Trail Mix
Ingredients: 1 cup banana chips 1/2 cup whole almonds 1/3 cup yogurt covered raisins 1/4 cup dark chocolate morsels 1/4 cup dried cranberries Directions: Toss the ingredients together, and portion out into snack bags. You can also store this in an airtight container if you prefer. Cranberries offer a nice burst of flavor, and a bit of fiber. The almonds contain loads of vitamin B, E and folic acid, plus protein - all good for your brain and mood! The potassium-laden banana chips also bring a bit of fiber to the party. While the yogurt covered raisins do up the sugar content, the addition adds a nice sweetness. The raisins pack a punch since they're full of calcium, iron and protein. And finally, the dark chocolate gives you antioxidants that are good for your heart.
